Cured – Allan Benton

Mr. Allan Benton, you sir make one of the best American country hams I’ve ever tasted in my life. Extremely porky, smoky, and lined with unctuous melty fat, the country ham’s flavor blows most hams out of the park. Having personally prepared and served Benton’s amazing hams at Momofuku Ssam Bar, I can definitely vouch for this man’s passion and craftsmanship!

Aside from his country hams, try the Smoky Mountain Jowl Bacon. We served it  crisped and hot with apple kimchi, maple labne, and arugula at Ssam Bar. You may need a tissue after experiencing it 😉
