Uni Risotto Recipe – First Blog Post Ever!

Hey everyone! Just testing out this new blog, a bit new to the world of blogging. So I plan to make this blog about ever day life and mainly about something I love dearly: Food. I am amateur at best and self taught in the culinary arts.

I guess I’ll start off by posting a picture of my latest creation: Uni Risotto with Fried Jump Shrimp topped with a Sherry Vinaigrette and White Truffle Oil.

  • 2 cups short grain rice (I like sushi rice) cooked in dashi and onions
  • 2 tablespoons uni puree (reduced cream with ratio of 1-ounce uni to 1 1/2 cups cream)
  • 20/25 count Tiger Shrimps
  • 1 Package of White Button Mushrooms
  • Salt and white pepper
  • Flour for dredging the shrimp
  • Canola oil for frying
  • 2 pieces fresh uni
  • 1 teaspoon truffle vinaigrette (either store-bought or homemade), or sherry vinaigrette finished with white truffle oil
  • White Truffle oil for drizzling
  • Optional: Green onion for topping


As the risotto finishes cooking, stir in the uni puree to coat the risotto. Set aside and keep warm.

Heat up some butter and saute some mushrooms and pour it into the risotto.

Heat up some canola oil to 375 degrees in a cast iron pan. Dredge shrimp simply in flour mixed with salt and pepper and fry for a minute or until golden brown, remove onto a couple paper towels to suck away all that oil.

To serve, place risotto in a bowl and top with shrimp. Carefully position a piece of uni on each of the shrimp. Garnish with green onions and drizzle with truffle vinaigrette and more truffle oil.
